The Starving Artist – Back from the holidays+TACO SALAD!

Hope you all had a glorious holiday filled with family shenanigans and delicious food! I split the holidays between Fort St Freeze your bum off John, and Vancouver Island. The perfect mix 🙂 So many play times with my nephews, it was amazing. My soul feels restored 🙂

 

THE STARVING ARTIST FOOOOOOOOOOD BLOG ENTRY

Last night I had to call my sister and ask for dinner ideas.

“PLEEEASE HELP ME!” I gasped.

“Taco salad.”

Boom.

And so here is my simplified, starving artists style of taco salad. Not the cheapest meal, but oh so mouth watering…

 

Ingredients:

  1. Ground beef (as much as you can afford)
  2. 1 pack of taco seasoning
  3. 1/2 yellow onion
  4. 1 tomato
  5. 1/2 can of kidney beans
  6. 1/2 can of black beans
  7. lettuce (ice burg lettuce I find is the least expensive, however I loooove spinach and arugula…)
  8. French dressing
  9. A small portion of cheese, aged cheddar or something along those lines is always delicious!
  10. Cilantro

Satay your onions a bit, throw in a tablespoon of garlic if you have it. Then add your beef. Sprinkle on some salt and pepper and garlic salt if you have it already. Stir that together then add 1/2 cup of water with the taco seasoning packet and pour that on the beef. I like to cook this on high, stirring lots to get rid of the liquid. Once the meat is nearly cooked I throw in the beans. Let that simmer for a few minutes, allowing the flavours to sink in.

While that all cooks, begin chopping your tomato, cilantro and cheese on the side.

Once the meat is cooked, take it off the burner and place somewhere to cool down. I prefer it cold, but if you like it hot, go for it.

Once cooled, in a separate bowl toss in a bunch of that lettuce, whatever kind you chose! Then some meat and beans, cheese and tomato. Now comes the exciting part. Grab that French dressing and add as much as desired. I added roughly a teaspoon, but if you want more, be my guest. It’s so dang tasty!

And there you have it folks. Quick taco salad that is crazy tasty. I was going to take a picture… but I got distracted when I eating it with all the delicious flavours… hehe.

The great thing about this meal is now you have a bunch of left over beans you can cook in the oven with some salt and pepper till they are a bit crispy, and throw in on salad for a meal later in the week. As well, you have all that left over beef and beans combo you can eat for left overs.
