You may not know this, but I have a love for baking. I once managed a bistro in my hometown, and am used to baking on the regular. Last night I found myself craving chocolate -as most girls do ;D The grocers were closed so I had to look in my cupboards and create something from within. The treats turned out great, so I thought I’d share!
Dark chocolate ( I used a baking chocolate that is in cubes) -I threw about 6-8 cubes in a pot. (Make sure you use a double boiler, or if you don’t have the right stuff like me, I just fill a pan halfway full with simmering water, and put the chocolate into a pot on top of the simmering water.
I slowly add a bit of almond milk. Not enough to make it soupy, but enough so that it’s not too thick.
Add about 1/4 cup of quick cooking oats, and 1/4 cup coconut flakes. Stir it in and add more almond milk if needed.
Once you’ve stirred everything in and the chocolate has coated all the goods, let it thicken up a bit.
Spoon out a heaping tablespoon of the mix onto some parchment paper. Make a hole in the middle and put a dollop of whatever jam you have in the fridge. I had strawberry jam -perfect flavour! Then mould the chocolate around the jam.
Once you’ve done this with all of the chocolate, put it in the fridge. These treats are great soft, but even better after a few hours in the fridge! I had one today and it was perfect. The chocolate was hardened and when I bit into it, and the gooey jam centre was a delicious surprise!
My apologies for not having exact measurements. But I’m the type of person who likes to throw stuff in to a pot and get creative! Anyhow, this chocolate fix is DELICIOUS, so give it a try if you need a fix!
