SWEET TOOTH BREAKFAST
Ingredients:
1 Peach
1 Banana
1/4 cup pancake mix (I use GF)
1/4 milk (I use almond milk)
Salt
Cinnamon
3/4 cup of water
Frying pan
Directions:
Thinly slice the peach and throw the slices in the boiling water with a couple shakes of salt. Cook on medium heat.
Stew peaches with lid on the pan, stirring often. Shake in some cinnamon. If there’s still a lot of water in the pan, take the lid off and turn up the heat a bit.
Once peaches soften, slice up the banana and add it in.
In a separate bowl add some pancake mix and milk and stir. You don’t want the consistency to be too thick.
Drizzle the mix on top of the stewed peaches and banana. Sprinkle a bit more salt and cinnamon on top, but on the lid and let cook for a few minutes.
Remember to use your flipper to gently scrape the bottom while everything’s cooking as to not burn the bottom. Don’t stir the pancake mix in, because then it might taste “eggy”, plus you just won’t get the same end result.
Once everything is cooked and I’ve put it into my dish, I sprinkle on some hemp hearts, chia seeds, flax seed and whatever other seeds I have in the cupboard.
This meal keeps me full for hours -which is a rare case! I’m usually hungry every hour (haha). It’s sweet without even adding any extra sweeteners. The bananas and peaches do that all on their own!
You could even replace the pancake mix with oats if you prefer!
